The Sacred Gardener
We’re nearing the end of our carrots from last y We’re nearing the end of our carrots from last year. 

We store them in our root cellar, buried in damp sand. We have a backup furnace in our house that turns on sometimes in the night, so it can dry out the air in the cellar, hence why we do this. 

They are still firm, some have some rot spots and while their flavour is still wonderful, is not as good as earlier in the season. These things are all a part of living in reality. 

I think about all the food that goes to waste, because many of us don’t want to, know how to or don’t have to think of a way to use it. 

In this house, cutting off the bad bits of vegetables, scraping off a funky layer from the sauerkraut are things that are just part of our way of life. Because we honour food, whether we grow it here or not.

We give thanks to the shrivelled carrot, and find a way to make sure it’s used.

Imagine all the stories this bean has, handed down from all those who carried them before. 

We plant a lot of beans. We love their reliability in germinating and their flexibility. Meaning, they are more forgiving with those learning if they’re not planted perfectly.  Good one for the kids to help with to gain confidence, less likely to suffer loses! 

Beans fix nitrogen, giving back to the soil. One bean can grow into a plant that produces 150 beans! 

These ones truly are gods. What a miracle.

Last wee the tips were perfect for pickling, getting big but hadn’t started to splay out at all. 
You can still pickle these later ones, after the tips start to splay, but they tend to break apart over time and look prettier on top of a cheese and cracker 😀

There is always creativity required when it comes There is always creativity required when it comes time to figure out how to prepare wild foods! It’s one thing to learn about harvesting and storing...then there’s how to prepare them so you’ll eat it after all the hard work. 

Part of our smelt harvest from early April became pickled fish. We cleaned the fish, chopped up lots of onions, added some peppercorns and poured out herbal vinegar over top and put the two gallons in the root cellar. They’re delicious on their own, but we wondered.. how else can we eat these beauties? 

Thanks to the inspiration of @pocketflowersmg and @amelia_fkw, who helped in the kitchen during the Sacred Gardener School this past week, we prepared a ceviche-like topping on crackers for our guests. 

Chopped pickled smelt, roasted red peppers, chopped pickled carrots (with ginger and garlic), lime juice and salt. Topped with wild leek leaves thanks to @handmadeherbology who brought up some she harvested where they’re up as ours aren’t quite there yet. 

Abundant spring blessings to you all, may spring’s bounty feed your creative spirit and nourish your body.

Dinner for the Sacred Gardener School folks! Our Dinner for the Sacred Gardener School folks! 

Our version of spanakopita made with Lamb’s quarters (from our harvests last season) and hemp cream (hemp nut, our herbal vinegar, roasted garlic, caramelized onions and tamari) , served with roasted carrots and beets and fresh picked dandelion greens. 

What a gift to share the land’s bounty with good people.
